Green Garden Salad with Tuna, Avocados, and Lime Balsamic Dressing

This salad combines mixed baby greens with tuna, avocados, and a lime balsamic dressing that I whipped up using ingredients that I had laying around the kitchen. It comes together with minimal effort and is just packed with flavor.

Ingredients

1/3 cup balsamic vinegar
1/3 cup olive oil
Juice of two small limes (or one medium lime)
Fresh ground black pepper
1 package mixed greens (purchase 1 large package or 2 smaller packages)
2 cans tuna fish in water
3 medium to large avocados
1/2 to 1 cup shredded cheese, any variety
Croutons (optional)

Directions

1) Mix the olive oil and balsamic vinegar in a small bowl. Add the lime juice. Mix well using a fork or whisk.

2) Whisk in fresh ground black pepper to taste.

3) Open both cans of tuna and drain out the liquid. (I like to save the tuna water to pour on my dogs food. It reduces waste and makes him feel like he's gotten a real treat!)

4) Empty the tuna cans into the dressing mixture and mix well to combine.

5) Cube the avocados. I recommend using a knife to cut each avocado in half lengthwise. Remove the pit carefully with a spoon, but leave the flesh of the avocado inside the skin. Using your knife, carefully make several slices length-wise and width-wise through only the flesh of the avocado, taking care not to cut through the skin. Then, use a teaspoon to scoop the avocado flesh out of the skin. It should come out in little cubes.

6) Put the mixes greens into a large bowl. Add the tuna and dressing mixture, the cubed avocados, and the shredded cheese. Toss until the greens are coated evenly with dressing. Sprinkle on the croutons (if desired) and enjoy!
