Cake-like Chocolate Peanut Butter Cookies
If you're looking for a delicious dessert or snack that satisfies your chocolate cravings but won't make you feel guilty, try these soft and delicious cookies, made with cocoa powder and peanut butter chips, that offer a low-fat and low-sugar option. With a yield of 5 dozen cookies, you might even have enough to share.
Ingredients
2 sticks butter4 eggs
2 tsp vanilla
3/4 cup granulated sugar
3/4 cup brown sugar
1 tsp salt
1 and 1/2 tsp baking soda
1/2 cup cocoa powder
3 and 1/2 cups flour
1 bag or 2 cups peanut butter baking chips (or try chocolate chips, Andes mint chips, etc.)
Directions
1) Preheat the oven to 375 degrees. While it's heating, place the butter in a large, microwave safe mixing bowl, and heat it until it melts.
2) Add both sugars, the eggs, and the vanilla. Mix well.
3) Add the flour, cocoa powder, baking soda, and salt. Mix until all the dry ingredients are moistened.
4) Add the peanut butter chips and fold in until they're evenly disbursed.
5) Using a teaspoon, place rounded teaspoon-fulls of cookie dough onto some ungreased cookie sheets, leaving about an inch between cookies. You should be able to fit 12 cookies on a standard cookie sheet.
6) Bake for 10 minutes. Then remove from the cookie sheets immediately and cool on wire racks. Enjoy!
Try experimenting with other types of baking chips. For plain chocolate chip cookies, leave the cocoa powder out and increase the flour by 1/2 cup. Let me know what types of combinations you try and which ones are your favorites!
