Spring Quiche

This quiche recipe is great because it can be made with ham, bacon, chicken, crab meat, or any other leftovers you feel would taste good with eggs, and can even be made as a vegetarian dish with the first fresh spring vegetables from your garden. The easy oil pastry recipe from my Better Homes and Gardens cookbook doesn't require a rolling pin, and is the perfect recipe for any single crust pie or quiche.

Crust Ingredients

1 and 1/4 cups all-purpose flour
1 tbsp sugar
1/4 tsp salt
1/4 cup canola oil
3 tbsp milk
1/4 cup canola oil

Filling Ingredients

5 beaten eggs
1 and 1/2 cups of milk
1/4 cup sliced green onions or chives
1/4 tsp sea salt
1/8 tsp freshly ground black pepper
Dash of nutmeg
3/4 cup chopped cooked ham, chicken, crab meat, bacon, shredded carrot, diced veggies, etc.
1 and 1/2 cups shredded cheese, any kind you like

Directions

1) Preheat the oven to 450 degrees. While it's heating, mix the dry ingredients for the crust in a medium mixing bowl. Then add the oil and 3 tbsp milk and mix until all flour is moistened.

2) Press the crust mixture into the bottom and up the sides of a 9-inch pie plate. Put the pie plate into the crust and cover it with a cookie sheet or pizza pan. Bake covered for 8 minutes.

3) Remove the pizza pan or cookie sheet that was covering the pie plate after the 8 minutes are up. Continue baking 4 to 5 minutes more or until the pastry is set and dry.

4) Remove the pastry from the oven and reset temperature to 325 degrees.

5) Meanwhile, using the same bowl the crust was mixed in, stir together the eggs, milk, green onion or chives, salt, pepper, nutmeg, ham or other meat/veggie, and shredded cheese.

6) Pour egg mixture into the hot, baked pie crust. Bake in the 325 degree oven for 45 minutes or until a knife inserted in the center comes out clean.

7) Remove from the oven and allow to cool 10 minutes before serving. Enjoy!
